Recipe

  • Preheat the oven to 180 °C (350 °F).

1. In a large bowl, mix the different flours and the baking powder.

2. Separate the egg whites from the yolks into two different bowls. Add the sugar to the yolks and beat with an electric mixer until the mixture becomes pale and frothy. Incorporate the flour + baking powder mixture and beat until smooth and lump-free.

3. Whip the egg whites until stiff peaks form and gently fold them into the batter with a spatula, turning from the edges.

4. Butter the cake tin, pour in the batter, and bake for about 35 minutes.

You can enhance this base in various ways with lemon zest, spice blends, cocoa powder, etc.
