Recipe

1. Cook the bacon lardons in a skillet over high heat until lightly grilled. Set aside.

Aurore sauce:

1. In a large saucepan, melt the butter over medium heat, add the buckwheat flour and mix energetically with a spatula until you get a homogeneous mixture.
2. Add the milk gradually while stirring well with a whisk to avoid lumps. Cook for 10 good minutes over medium heat, stirring constantly until the sauce thickens.
3. Add the salt, pepper and nutmeg and mix.
4. Add 100 gr of tomato sauce and stir well.

The gratin:

Preheat the oven to 200°C.
1. Cook the pasta in a pot filled with water for the indicated time. Drain it and place it in a gratin dish. Add the bacon and mix.
2. Pour the aurore sauce over all the pasta and shake the dish a little so it spreads well. Add the grated emmental.
3. Cook for approximately 20 minutes.
