Wash and slice the bell peppers, then sauté them in a pan over medium heat with a drizzle of olive oil, covered, for about 5 minutes.

Slice the chicken fillets and add them to the pan, cooking until they are lightly golden.

Add the tomato purée (without garlic or onion), the Herbes de Provence, the sprig of rosemary, the sage leaves, the salt, and the pepper, then let simmer for 20 minutes covered.
